Couscous refers to small pellets or granules made from semolina flour, generally considered a Moroccan specialty. It has its origins in the Maghreb, the region of North Africa consisting of Morocco, Algeria and Tunisia.

Traditional preparation of couscous is fairly time consuming, and it is usually steamed. However, one can find packaged couscous in Western supermarkets that has been pre-steamed and dried. Traditionally, it is usually served over a meat or vegetable stew.
