A common name for a variety of fish of the genera Sarotherodon, Oreochromisand Tilapia, native to African and Mediterranean waters, which is now farm-raised around the world. Tilapia are also known as St. Peter's fish.

Tilapia cooks quickly, and has a mild and sweet flavor. The flesh can be fried, boiled, blackened or grilled. It is ready to be served when it turns an opaque white.
