Mascarpone refers to a soft Italian cream cheese, made from Crème fraich, a sour cream containing 28% butterfat. However it is less sour and thicker than regular sour cream.


Mascarpone is often found in recipes that also contain whole wheat bread, strawberries and lemon zest


Substitution for 1 cup mascarpone:

4 tablespoon butter
3/4 cup cream cheese
3 tablespoon heavy cream

Combine all ingredients.
