Quinoa is a grain-like crop native to South America, grown for its edible seeds. Since it's not part of the grass family, it's not technically a cereal, like wheat. It is actually more closely related to spinach and beets.

Its texture becomes fluffy and light when cooked. It has a nutty flavor, which makes it a good substitute for cousous or rice. It's usually cooked like rice, where one cup of quinoa is brought to a boil with two cups of water and boiled for 15 minutes or until the seed and germ separate.

Quinoa is often found in recipes that also contain cajun seasoning, vegetable broth, black beans, corn and chicken breast halves
