Also called tapioca starch, tapioca flour is a starch that comes from the root of the cassava plant. Tapioca pearls are the same thing, but the flour has been ground into a fine powder. It is often used to give structure to gluten-free baked goods. It also makes the final product chewy or crispy. Too much of it can make the food slimy and affect the flavor, so finding a proper balance in a recipe can be a bit tricky.

Tapioca flour can also be used as a thickener in sauces and gravies.
