Cannellini bean are a creamy, white-colored bean from Italy that have a nutty and mild flavor when cooked. These are usually available canned. Just drain and rinse to use.
To prepare dried beans, soak them in cold water for at least 5 hours. Drain and rinse, and place in a saucepan with enough water to cover and bring to a boil, scoop away any foam, and boil for 10 minutes, scooping off any more foam. Cover, and simmer for about 1 1/2 hours or until tender, adding more water as needed.
