Coat a grill
rack with cooking spray. Preheat to medium high heat. In a small bowl, combine brown
sugar, butter and oil. Brush both sides of pineapple slices with oil and sugar mixture. Place on grill, and grill covered ofr 8 t o10 minutes , turning and basting once, or until slightly charred. Remove from heat and cool for a few minutes. Cut into bite sized pieces. Combine remaining ingredients, pineapple, any remaining juices in a a medium bowl, tossing to mix. Serve warm or chilled. Serves 6.
