A quick stir-fry of brown rice and vegetables.

Ingredients (serves 4)
- Cook rice according to package directions. Drain and set aside.
- Heat oil vegetable oil in a wok or large skillet over medium-high heat.
- Add onion and saute for 1 minute.
- Add eggs, and scramble them.
- Stir in rice, remaining vegetables, sesame oil, soy sauce and garlic powder. If desired, you can stir in 1 cup of cooked beef, shrimp, or chicken.
