Preheat oven to 350F (175C). In a large bowl, cream together the brown
sugar, sugar and butter until fluffy. Beat in the pumpkin, egg, and vanilla. In a medium bowl, combine the remaining ingredients, and add to the pumpkin mixture. Combine well. Drop teaspoonfuls of the batter onto cookie sheets covered with parchment paper
or lightly greased with cooking spray. Bake
12 to 15 minutes or until lightly browned around the edges.
