Ingredients (serves 4)

  • 1 pound haddock ; fillets
  • 1/3 cup salsa
  • 21 fluid ounces chicken broth
  • 10 3/4 fluid ounces tomato soup
  • 2 teaspoons cilantro ; chopped
  • 1 tablespoon lime juice
  • 2 cups white rice ; uncooked
  • 1 clove garlic ; minced

  • You will also need: baking dish

    Directions

    Cook rice according to package directions. Place haddock in a 2 quart baking dish. In a small bowl, combine garlic, cilantro, soup, broth, lime juice and sala, and pour over the haddock. Bake at 400F (200C) for 20 minutes or until fish flakes easily with a fork. Serve with rice.
