Fettuccini with Red Pepper Sauce

It's creamy and quite spicy. Add some chicken, if desired.

Original recipe serves 4.

Ingredients

12 ounces fettuccine
3/4 teaspoon cayenne pepper ; ground
1 cup sour cream ; reduced fat
3/4 cup chicken broth
3/4 cup parmesan cheese
2 whole red bell pepper ; julienned
3 cloves garlic ; minced
salt ; to taste
black pepper ; to taste

Preparation:

Cook fettuccini according to package directions, and drain.

Saute garlic, cayenne pepper and red bell peppers in a large skillet sprayed with cooking spray over medium heat for about 5 minutes.

Add the broth and sour cream, and simmer uncovered for about 5 minutes. Remove the sauce from the heat and stir in the parmesan cheese. Toss the fettuccini with the sauce. Season to taste with black pepper and salt.

this is a great sauce. if you add something extra to it, like chicken, it would be a good idea to make some more of the sauce with it.

Very tasty and easy to make. You may want to simmer longer to thicken the sauce more.
