Grilled Sirloin With Texas Mop Sauce

Coffee is a key ingredient in Texas mop sauce, which is used to mop, or baste meat while cooking, giving it tenderness. The name comes from Southern cooks using mops to baste large meat chunks.

Original recipe serves 4.

Ingredients

1 1/2 pounds sirloin ; steak, about 1 1/2 inches thick
1/4 cup coffee ; strong, decaffinated
1 tablespoon maple syrup
2 tablespoons Worcestershire sauce
1 teaspoon black pepper
1/2 cup tomato sauce ; no salt added

Preparation:

Combine coffee, syrup, tomato sauce and Worchestershire sauce in a sauce pan. Bring to a simmmer, and remove from the heat. Transfer 2/3 a cup of the sauce to a small bowl, reserving for dipping.

Coat a grill with cooking spray and heat to medium-high. Rub steak on both sides with pepper. Grill steak, frequently basting with the remaining mop sauce, 5 to 7 minutes per side for medium-rare. Allow steak to rest for 5 to 10 minutes.

Cut steak into thin slices and divide evenly amoung serving plates. Serve with reserved sauce for dipping.
