Raisin bread with brown rice flour instead of all purpose flour.

Original recipe serves 10.

Ingredients

1/4 cup vegetable oil
1/4 cup brown sugar
1 1/4 cups brown rice flour
1 egg(s)
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup raisins ; soaked in hot water for 10 minutes
1 teaspoon cinnamon
1/2 cup milk
1/2 cup pecans ; chopped
1/4 cup applesauce

Preparation:

Preheat oven to 350F (175C). Spray a 9x5x3 inch baking pan with cooking spray. Combine sugar, oil in a medium bowl using a wooden spoon. Stir in the egg. Add the baking soda, baking powder, cinnamon and flour. Add the milk, applesauce, pecans and raisins. Pour the mixture into the pan and bake for 35-40 minutes. Allow bread to cool in the pan before removing it.
