A sweet, citrus cake.

Directions
Preheat an oven to 350F (175C).
Grease a round, 9 inch cake pan that has tall sides. Dust with 3 tbsp of the breadcrumbs.
Zest the grape fruits and add the zest to a small bowl. Juice one of the grapefruits to give about 3/4 cup of juice and add to the bowl. Add the olive oil and stir to combine.
In a separate large bowl, beat the salt and eggs together until frothy. Slowly beat in the honey and sugar, for about 2 minutes.
Combine baking powder, flour, and 1/4 cup of the breadcrumbs in another large bowl.
Beat the dry ingredients into the egg mixture, adding a little at a time.
Fold in the grapefruit mixture.
Add the batter to the cake pan and bake for 50 mintues.
Let cool for a bit and dust with confectioner's sugar before serving.
