Ingredients (serves 5)

  • 1 medium onions ; chopped
  • 1 cup carrots ; sliced
  • 1 cup mozzarella cheese ; cubed. Can substitute with provolone
  • 1 cup zucchini ; sliced
  • 1 red bell pepper ; chopped
  • 8 ounces rotini ; primavera, cooked as package directs
  • 2 tablespoons parmesan cheese ; grated
  • Italian dressing ; to taste
  • Directions

    Place cooked pasta in a large bowl. Add all vegatables and cheese. Pour dressing over the pasta and vegetables, and toss to coat. Sprinkle with parmesan cheese. Refrigerate for at least 2 hours. Serves 4 to 6.
