A dip made from ground chickpeas. Serve with pita or other bread.

Ingredients (serves 8)
- Soak chickpeas in water overnight.
- Using different water and enough to cover the chickpeas, cook in a pressure cooker for 1 hour. Reserve the cooking water.
- Transfer warm chickpeas to a food processor, and add garlic, tahini, lemon juice, salt, pepper and cumin.
- Add reserved water and process until hummus is smooth.
