Ingredients (serves 12)

  • 8 cups potatoes ; diced
  • 43 1/2 fluid ounces chicken broth ; or three 14.5oz cans
  • 43 1/2 fluid ounces cream of chicken soup ; or three 14.5oz cans
  • 1/3 cup onions ; diced
  • 8 ounces cream cheese ; softened
  • 1/2 pound bacon ; cooked and crumbled

  • You will also need: slow cooker

    Directions

    Combine broth, cream of chicken soup, onions and potatoes in a slow cooker / Crockpot.

    Cover, and cook on low heat for 8 hours or until potatoes are tender.

    Blend in the cream cheese.

    Top with chives and crumbled bacon before serving.

    Is it good for diabetic patients as potato contains some amount of sugar.
