Ingredients (serves 24)

  • 2 egg(s)
  • 1 cup oats ; rolled
  • 3/4 cup water
  • 18 1/4 ounces yellow cake mix ; basically 1 package
  • 3/4 cup butter ; melted
  • 3/4 cup brown sugar ; light, packed
  • 1 teaspoon cinnamon
  • 12 ounces cranberries
  • 1 cup sugar
  • 1 teaspoon ginger ; ground

  • You will also need: saucepan, baking dish

    Directions

    1. Preheat oven to 350F (175C).
    2. Combine water, sugar and cranberries in a saucepan over medium heat. Cook for about 15 mintues until all cranberries have popped and the mixture is thick. Remove from the heat and set aside.
    3. Combine eggs, cake mix, butter in a large bowl.
    4. Stir in the oats, ginger, cinnamon, and brown sugar.
    5. Set aside about 1 1/2 cup of the mixture and spread the rest evenly in a 9x13 inch baking dish.  Pack it down tightly to make it solid.
    6. Evenly spread on the cranberry mixture.
    7. Spread on the reserved oat mixture to make another layer.
    8. Bake for about 35 to 40 minutes in the preheated oven, or until the top is lightly browned.
    9. Allow to cool in the pan for about 40 minutes before cutting into bars.
