Ingredients (serves 8)

  • 1 cup all-purpose flour
  • 1/3 cup cocoa powder ; unsweetened
  • 1 teaspoon vanilla extract
  • 1 cup sugar
  • 1/2 cup baking soda
  • 1/8 teaspoon salt
  • 1/2 cup butter
  • 1 egg(s) ; beaten

  • You will also need: parchment paper, baking sheet

    Directions

    1. Preheat oven to 350F (175C)
    2. Combine butter and sugar in a large bowl until smooth.
    3. Stir in beaten egg, and then the vanilla.
    4. Stir in the flour, baking soda, salt, cocoa powder. Mix until well incorporated and a smooth batter forms.
    5. Line a baking sheet with parchment paper, and drop by heaping teaspoonfulls of batter onto the sheet.
    6. Bake in the preheated oven for 10 to 15 minutes, or until a toothpick inserted into one of the cookies comes out clean.
    7. Cool for a few minutes before transferring cookies to wire racks to cool completely
    Tip: Optionally use "Special Dark" cocoa powder for dark chocolate cookies!
