Ingredients (serves 4)

  • 1 pound chicken breast halves ; Cut into bite-sized pieces
  • 1/2 cup BBQ sauce
  • 1/2 cup orange marmalade
  • 1 tablespoon soy sauce
  • 1/4 cup water
  • 1 onions ; chopped
  • 1 cup bread crumbs
  • 1 egg(s) ; beaten
  • 15 ounces pineapples ; canned chunks
  • 1 red bell pepper ; cut into 1 inch pieces
  • 1/4 cup vegetable oil ; plus 1 tbsp
  • 1 cup all-purpose flour
  • 2 cups jasmine rice ; cooked

  • Directions

    1. Dredge chicken pieces in flour, dip in beaten egg, and then dip in breadcrumbs, turning to coat. Set aside
    2. Heat 1 tbsp oil in a pan over medium heat and saute the onions and pepper, 10 minutes or until tender. Set aside.
    3. Add remaining oil to pan and fry chicken pieces about 15 minutes or until crisp. Drain excess oil from pan.
    4. Whisk together orange marmalade, soy sauce, and BBQ sauce in a small bowl.
    5. Add marmalade mixture, onions and peppers, and pineapple to the pan with the chicken. Simmer for 10 minutes.
    6. Serve over cooked Jasmine rice.
