  • 9 teaspoons horseradish
  • 9 cups white wine
  • 2 1/4 cups bread crumbs
  • 4 1/2 cups mayonnaise
  • 2 1/4 cups parmesan cheese ; grated
  • 13 1/2 pounds salmon ; filet
  • 27 tablespoons Dijon mustard

    This recipe is extremely easy and fast, and the ingredients for the topping can be varied in amounts according to taste. When I make this for only two people, I make it in a the toaster oven. If using more salmon, I would use a baking dish in the oven. Place salmon filet shallow baking dish (or toaster oven tray) and pour white wine over it. If there is skin, let it be on the bottom. It will be poaching in the white wine. In a small bowl, mix the mayo, mustard, horseradish, bread crumbs and grated parm into a paste. Spread the paste over the top of the salmon. Baked at 375 for five to ten minute or until the color inside is light pink and the texture is flakey. Then turn the broiler on for a few minutes until the crust browns. Serve immediately.

    very good, i used more horshradish bc i love it and used reduced cal mayo.  me and my husb loved it!

    too much crust! I would cut the ingredients in half and use a bit more mayo. and a bit less horseradish next time
