Ingredients (serves 20)

  • 1/2 teaspoon salt
  • 2 2/3 cups confectioner's sugar ; divided
  • 2 teaspoons almond extract
  • 1 1/2 teaspoons allspice
  • 1 1/2 cups almonds ; toasted, finely chopped
  • 2 cups all-purpose flour
  • 1 cup butter ; At room temperature, unsalted
  • 4 teaspoons vanilla extract
  • 1 teaspoon cinnamon ; ground
  • 1 1/2 teaspoons cardamom

    Directions

    Preheat oven to 350F. In a medium bowl, combine vanilla and almond extracts, spices, sugar, and salt and beat with an electric mixer. Beat in flour, then stir in almonds. Roll dough into tablespoon-sized balls and place in on a large baking sheet. Bake about 25 minutes or until golden brown. Cool for about 5 minutes. Coat hot cookies in remaining sugar, working in batches as needed. Cool completely. Roll cookies in sugar again and serve. Makes about 20 cookies.
