Chinese style, deep fried chicken with a honey and garlic sauce.
Ingredients (serves 2)
In a bowl, whisk together the cornstarch, flour, baking powder, the remaining salt, and water to make the batter.
Heat 2 inches of oil in a heavy skillet or pot to 300F (150C).
Season chicken with additional salt, if desired. Roll chicken pieces in the batter. Add the coated chicken to the hot oil and fry until browned and cooked through. Monitor the temperature with a thermometer.
Drain the chicken on paper towels. Transfer to a serving dish and pour the sauce over it, and serve.
