Ingredients (serves 2)

  • 4 egg(s) ; hard-boiled
  • 0.666666666667 teaspoon paprika
  • 0.666666666667 tablespoon mayonnaise
  • 0.666666666667 teaspoon white vinegar ; or to taste
  • salt ; to taste
  • black pepper ; to taste
  • 0.166666666667 teaspoon yellow mustard

    Peel the shell off of the hard-boiled eggs, and cut them in lengthwise, in half. Carefully scoop out the yolk and place into a small bowl. Set the egg whites aside..

    Mash the yolks and add in the mustard, mayonnaise and vinegar. Season to taste with salt and pepper. If the mixture is too dry to stick together, you can add a little more mayonnaise. Fill the egg whites with the yolk mixture, but do not pack tightly. Sprinkle with paprika. Let cool completely. Serve on a bed of lettuce, if desired.
