Hard-boiled eggs cut in half and filled with a flavored yolk mixture.

Ingredients (serves 6)
Mash the yolks and add in the mustard, mayonnaise and vinegar. Season to taste with salt and pepper. If the mixture is too dry to stick together, you can add a little more mayonnaise. Fill the egg whites with the yolk mixture, but do not pack tightly. Sprinkle with paprika. Let cool completely. Serve on a bed of lettuce, if desired.
