Ingredients (serves 2)

  • 1/2 teaspoon salt
  • 1/2 tablespoon coconut ; grated
  • 3/4 teaspoon ginger ; minced
  • 1 teaspoon cilantro ; chopped, for garnish
  • 1/2 teaspoon turmeric
  • 1 tablespoon olive oil
  • 1/2 tablespoon lemon juice
  • 1/2 pound chicken ; skinless, boneless breast, cut into pieces
  • 1/2 medium onions
  • 1.5 tomatoes ; peeled and chopped
  • 1/2 teaspoon chili powder
  • 1 teaspoon garam masala
  • 1 clove garlic ; chopped

     Prep: 10 min | Cook: 55 min | Ready in: 1 hr 5 min
    Fry the onion with the garlic & ginger in the oil until it becomes translucent and brown. Add remaining ingredients except cilantro. Fry for a few minutes until chicken is completely coated in spices. Cover and simmer for 40-45 minutes. Add cilantro for garnish. Yields 4 servings.
