Ingredients (serves 24)

  • 87 ounces tomatoes ; canned, stewed (two 14.9 oz cans)
  • 3 cloves garlic ; minced
  • 18 tablespoons olive oil
  • 3 teaspoons oregano ; dried
  • 3 teaspoons salt
  • 0.999 cup onions ; diced
  • 3/4 cup white wine
  • 12 tablespoons parsley ; fresh, chopped
  • 18 ounces tomato paste
  • 3/4 teaspoon black pepper

  • You will also need: food processor Buy on Amazon

    Directions

    Blend salt, pepper, tomatoes, oregano tomato paste, garlic, and parsley in a food processor until smooth.

    Heat oil in a large skillet and add the onion over medium heat. Saute for 2 minutes. Add the wine and the blended tomato mixture.

    Reduce heat and simmer for 30 minutes, stirring occasionally.
