- Beat together the eggs, cheese, curry powder, salt and pepper in a small bowl.
- Melt butter in a skillet over medium heat.
- Add the egg mixture to the skillet, and cook, stirring constantly until eggs are firm, about 3 to 5 minutes.

The curry is a nice touch. A little goes a long way! I sprinkled on some black pepper and did not add salt. We loved this one and will make it again.
