Ingredients (serves 15)

  • 3 medium onions ; chopped
  • 3 cups carrots ; sliced
  • 3 cups mozzarella cheese ; cubed. Can substitute with provolone
  • 3 cups zucchini ; sliced
  • 3 red bell pepper ; chopped
  • 24 ounces rotini ; primavera, cooked as package directs
  • 6 tablespoons parmesan cheese ; grated
  • Italian dressing ; to taste

  • Directions

    Place cooked pasta in a large bowl. Add all vegatables and cheese. Pour dressing over the pasta and vegetables, and toss to coat. Sprinkle with parmesan cheese. Refrigerate for at least 2 hours. Serves 4 to 6.
