Ingredients (serves 2)

  • 2 fillets salmon ; 4 oz each
  • 1/8 cup butter ; melted
  • 0.625 cup bread crumbs
  • 2 teaspoons parsley ; fresh, chopped
  • 3/4 tablespoon honey
  • 1 1/2 tablespoons Dijon mustard
  • salt ; to taste
  • black pepper ; to taste
  • 1/8 cup pecans ; chopped

     Prep: 15 min | Cook: 15 min | Ready in: 30 min
    1. Preheat oven to 400F (200C)
    2. Combine honey, mustad and butter in a small bowl and set aside.
    3. In another small bowl, combine pecans, parsley and breadcrumbs.
    4. Arrange salmon in a baking pan skin side down. Brush each with the mustard mixture and sprinkle with the breadcrumb mixture.
    5. Bake for 12 to 15 minutes or until the fish easily flakes with a fork. Season to taste with salt and pepper.
