A powdery foodstuff milled from a cereal grass. Rye flour has less gluten than all-purpose flour or whole wheat flour, and is also darker in color and heavier than most other flours. Because of its low gluten content, it does not produce a high-rising loaf of bread without the addition of other flours higher in protein. Rye flour is often used in Eastern European cooking.
