Also known as a butternut pumpkin in Australia, the butternut squash (Cucurbita moschata) is a variety of edible winter squash with a yellow skin and orange flesh. The squash can be roasted, or pureed and used as a key ingredient in many soups, breads or casseroles. It is a nice source of potassium and fiber.
Butternut squash is often found in recipes that also contain anise seed, cauliflower, sage, spaghetti, heavy cream and sweet potatoes
