Vanilla beans refer to the long, thin seed pods of the vanilla orchid. The beans have a sweet, and slightly smoky or woody flavor once cured.
The beans are initially flavorless. Developing the flavor consists of hand-picking them, and briefly boiling them in water to stop growth. They are then wrapped and cured by heating them in the sun, and sweating them at night for up to 20 days. They are then fermented by air drying for an additional 4 to 6 months
