Also known as bismarck herring, pickled herring is a type of cured herring that is a delicacy in many parts of Europe, especially Eastern Europe, and is common in Ashkenazi Jewish cuisine. It is also found in the cuisine of Hokkaido, Japan, where large quantities are stored for winter.

Pickled herring is typically cured using a two-phase process. The first phases involves curing with salt to extract water. The next phase involves the the removal of salt and the addition of flavorings. Such flavorings may include vinegar, sherry, peppercorn, bay leaves, onion, mustard or dill.
