Also called vegetable spaghetti or noodle squash, spaghetti squash is a variety of winter squash. It is oblong in shape and contains seeds. The orange or yellow flesh of the spaghetti squash is quite hard, and is often baked or steamed to soften before eating. The seeds can be roasted separately and eaten as a snack.

When spaghetti squash flesh is sufficiently softened via heat, it pulls apart into spaghetti-like strands. These strands make a good substitute for wheat pasta and can be served with sauces or flavored with butter and/or olive oil.


Spaghetti squash is often found in recipes that also contain sage and almonds
