Ingredients (serves 7)

  • salt ; to taste
  • 1/2 cup parmesan cheese ; grated
  • 20 ounces broccoli ; frozen, chopped, thawed, drained
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1/2 cup bread crumbs
  • black pepper ; to taste
  • 2 tablespoons butter ; melted
  • 1 tablespoon lemon juice
  • 6 cups chicken ; shredded, cooked
  • 1/2 cup white wine ; dry
  • 1 cup cheddar cheese ; sharp, grated
  • 1 teaspoon curry powder
  • 21 ounces cream of mushroom soup

    Directions

     Prep: 20 min | Cook: 45 min | Ready in: 1 hr 5 min
    1. Preheat oven to 350F.
    2. Combine thawed broccoli with chicken in a casserole dish.
    3. In a medium bowl, combine the sour cream, soup, mayonnaise, lemon juice, curry powder, cheddar, salt and pepper, to taste, and wine. Whisk together to make a sauce.
    4. Pour the sauce over the broccoli and chicken mixture. Mix well with a spatula.
    5. Place the mixture into an 11 by 7-inch casserole dish or 2 (9-inch) square disposable aluminum foil pans that have been sprayed with vegetable oil cooking spray.
    6. Smooth down evenly with a spatula.
    7. In a small bowl, combine the Parmesan, bread crumbs and butter. Sprinkle the bread crumb mixture over the casserole.
    8. Bake for 30-45 minutes. Makes 6 to 8 servings.
