Ingredients (serves 4)

  • 1 teaspoon salt
  • 1 tablespoon coconut ; grated
  • 1 1/2 teaspoons ginger ; minced
  • 2 teaspoons cilantro ; chopped, for garnish
  • 1 teaspoon turmeric
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 pound chicken ; skinless, boneless breast, cut into pieces
  • 1 medium onions
  • 3 tomatoes ; peeled and chopped
  • 1 teaspoon chili powder
  • 2 teaspoons garam masala
  • 2 cloves garlic ; chopped

  • Directions

    Fry the onion with the garlic & ginger in the oil until it becomes translucent and brown. Add remaining ingredients except cilantro. Fry for a few minutes until chicken is completely coated in spices. Cover and simmer for 40-45 minutes. Add cilantro for garnish. Yields 4 servings.
