Directions
Blend all ingredients except chicken in a blender until smooth to make the marinade.
Add chicken to a large bowl and pour in the marinade. Mix to coat.
Cover and refrigerate for at least 48 hours.
Discard marinade.
Thread marinated chicken cubes onto soaked bamboo skewers and grill over medium heat for 5-7 minutes per side, or until done and juices run clear.
