Ingredients (serves 1)

  • 2 egg(s) ; beaten
  • 2 tablespoons cheddar cheese ; shredded
  • 1/4 teaspoon curry powder
  • 1/2 teaspoon butter
  • salt ; to taste
  • black pepper ; to taste

  • Directions

    Beat together the eggs, cheese, curry powder, salt and pepper in a small bowl.

    Melt butter in a skillet over medium heat.

    Add the egg mixture to the skillet, and cook, stirring constantly until eggs are firm, about 3 to 5 minutes.

    The curry is a nice touch. A little goes a long way! I sprinkled on some black pepper and did not add salt. We loved this one and will make it again.
