Ingredients (serves 6)

  • 12 ounces sausage ; smoked, cut into 1/2" moons
  • 12 ounces kale ; stemmed and shredded
  • 1 1/2 pounds potatoes ; cut into 1/2" chunks
  • 1 medium onions ; diced
  • 2 cloves garlic ; minced
  • 1/4 teaspoon cayenne pepper
  • 43 1/2 fluid ounces chicken broth ; (three 14.5 oz cans), low sodium
  • 1 tablespoon olive oil

  • Directions

    Heat oil in a large (6-8 quart) pot over medium heat.

    Add the onion and cook until it is soft, about 2-3 minutes.

    Add the cayenne pepper and garlic. Cook an additional minute, or until fragrant.

    Add the broth and the potatoes. Bring to a boil, and reduce heat to a simmer.

    Simmer for 10-15 minutes, until the potatoes are tender.

    Carefully transfer half of the soup to a blender and puree it.

    Return the puree to the pot. Add the sausage and kale.

    Simmer for an additional 10 to 15 minutes, until the kale is wilted.
