This is like peach cobbler, but in muffin form

Ingredients (serves 16)

  • 2 cups peaches ; pelled, pitted, and chopped
  • 1 1/4 cups vegetable oil
  • 3 egg(s) ; beaten
  • 2 cups sugar
  • 1 tablespoon cinnamon ; ground
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt

  • Directions

    Preheat oven to 400F ( 200C).

    Lightly grease 16 muffin cups with cooking spray, or line with paper muffin liners.

    Mix  the flour, cinnamon, baking soda and salt in  large bowl.  In a separate bowl, mix the sugar, eggs and oil.

    Stir the oil mixture into the flour mixture, and combine until moist.

    Fold in the chopped peaches.

    Evenly pour the batter into the muffin cups and bake for 25 minutes, or until a toothpick inserted into the centers come out clean.

    Let cool for 10 minutes, and then turn onto a wire rack to cool completely before serving.
