Directions
Combine oil, thyme, garlic, salt, and pepper in a small bowl.
Place the prime rib in a roasting pan, fatty side up.
Spread the garlic mixture over the fatty layer of the prime rib. Let it sit out until it reaches room temperature, but for no longer than one hour.
Preheat oven to 500F (260C).
Bake for 20 minutes at 500F (260C), then reduce heat to 325F (165C). Continue cooking for an extra 60 to 75 minutes, or until a meat thermometer inserted into the roast reads 145F (53C), for medium rare.
Remove from oven and let sit for 10 to 15 minutes before carving.
