A dip made from ground chickpeas. Serve with pita or other bread.

Ingredients (serves 8)

  • 1 kilogram chickpeas ; dried
  • 1 kilogram tahini
  • 5 cloves garlic
  • 1/2 cup lemon juice
  • salt ; to taste
  • black pepper ; to taste
  • 1 tablespoon cumin ; ground

  • You will also need: food processor


    1. Soak chickpeas in water overnight.
    2. Using different water and enough to cover the chickpeas, cook in a pressure cooker for 1 hour.  Reserve the cooking water.
    3. Transfer warm chickpeas to a food processor, and add garlic, tahini, lemon juice, salt, pepper and cumin. 
    4. Add reserved water and process until hummus is smooth.
