A Southern classic that does well with catfish or other traditional dishes. They are fried and have buttermilk. What's not to like?

Ingredients (serves 8)

  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1/2 tablespoon baking soda
  • 1/2 cup onions ; minced
  • 4 green onions ; minced
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1 cup cornmeal
  • 2 egg(s) ; brought to room temperature
  • 1 quart vegetable oil ; plus 1/4 cup

  • You will also need: saucepan, baking sheet, deep fryer

    Directions

    1. Preheat oven to 200F (95C)
    2. Heat 1 quart of oil in a deep fryer or large saucepan to 365F (185C)
    3. Whisk together the egg, 1/4 cup of oil and buttermilk in a small bowl.
    4. In a separate bowl, combine the flour, sugar, salt, cornmeal and baking soda.
    5. Fold the buttermilk mixture, onions and green onions into the buttermilk mixture until combined.
    6. Drop balls of batter, about 6-8 tablespoons each into the hot oil and fry for 10 minutes or until golden.
    7. Remove hush puppies using a slotted spoon and drain of excess oil on paper towels. Work in batches as needed.
    8. Unless serving immediately, transfer the hush puppies to a baking sheet and keep warm in the preheated oven until serving.
