Ingredients (serves 4)

  • 19 ounces black bean soup ; canned
  • 15 ounces chickpeas ; canned
  • 16 ounces baked beans ; canned, vegetarian
  • 24 1/2 ounces tomatoes ; chopped, canned
  • 15 ounces corn ; canned, drained
  • 15 ounces kidney beans ; canned, drained
  • 1 medium onions ; red, chopped
  • 1 medium green bell pepper ; chopped
  • 1 medium sweet potatoes ; peeled and diced
  • 2 cloves garlic ; peeled and chopped
  • 1 tablespoon parsley
  • 1 tablespoon oregano
  • 1 tablespoon basil
  • black pepper ; to taste
  • salt ; to taste

  • Directions

    1. Combine all ingredients in a slow cooker.
    2. Cook on low for 4 to 6 hours or on high for 2 hours.
