This is sort of like Pepper Steak, but with chicken. Served in a dark, soy-based sauce.

Ingredients (serves 2)

½ 2x 3x Reset

  • 1/2 teaspoon salt
  • 1 tablespoon cornstarch
  • 1/4 cup soy sauce
  • 0.5 green bell pepper ; sliced
  • 1/2 tablespoon vegetable oil
  • 1/2 pound chicken ; breasts
  • 1 teaspoon garlic ; minced
  • 1/2 large onions ; sliced
  • 1 1/4 cups water
  • 2 tomatoes ; roma, seeded and chopped
  • 1/4 teaspoon onion powder

  • Directions

    Heat oil in a large skillet over medium heat. Season chicken with salt and onion powder, and place in skillet. Cook for about 5 to 7 minutes, then add 4 tablespoons soy sauce, garlic and half of the sliced onion. Cook until chicken is no longer pink. Dissolve cornstarch in water in a small bowl, and stir into the chicken mixture. Stir in 4 tablespoons soy sauce, bell pepper, tomatoes, and remaining onion. Simmer until gravy has reached desired consistency. Makes 4 servings.

    add some ginger to this...maybe about a tablespoon
