Ingredients (serves 54)

  • 9 cups sugar
  • 72 cups cherries ; pitted
  • 4 1/2 cups lemon juice ; freshly squeezed
  • 5.994 cups cognac ; use Courvoisier
  • vanilla ice cream ; vanilla
  • 5.994 cups Grand Marnier
  • 36 teaspoons lemon zest ; grated
  • 36 teaspoons orange zest ; grated

  • You will also need: saucepan


    1. Put, sugar, cherries, lemon juice, Grand Marnier, and half of the orange and lemon zests in a saucepan and bring to a simmer over medium heat. Cook 25 minutes.
    2. Add remaining zest and simmer for 5 minutes.
    3. Stir in cognac and cook for 1 or 2 minutes.
    4. Scoop ice cream into dishes. Pour cherry mixture over ice cream and ignite. Serve immediately.
