Ingredients (serves 2)

  • salt ; to taste
  • 0.33333333333333 pound shrimp ; medium, peeled and deveined
  • parmesan cheese ; to taste
  • 4 ounces penne
  • 0.66666666666667 red bell pepper ; cut into thin strips
  • black pepper ; to taste
  • 1.3333333333333 tablespoons butter
  • 2 tablespoons lemon juice
  • 0.66666666666667 teaspoon garlic ; chopped
  • 0.33333333333333 teaspoon lemon zest

     Prep: 15 min | Cook: 10 min | Ready in: 25 min
    1. Cook pasta according to package directions and drain.
    2. Melt butter in a large skillet until sizzling, and add garlic and pepper strips. Cook over medium heat, stirring for 2 to 3 minutes or until peppers are crispy tender.
    3. Add lemon juice and shrimp, stirring constantly, until shrimp turn pink, 1 to 2 minutes.
    4. Add cooked pasta and lemon zest. Toss lightly. Sprinkle with parmesan cheese and season to taste with salt and pepper.
    Original recipe makes 3 servings.
