Ingredients (serves 12)

  • 6 cups pineapples ; fresh, chunks
  • 2 teaspoons brown sugar
  • 2 cups pineapple juice ; unsweetened
  • 4 tablespoons cilantro ; chopped, fresh
  • 4 jalapeno pepper ; minced
  • 2 red bell pepper ; cored, seeded and chopped
  • 2 cucumber ; peeled, seeded and chopped
  • 1/2 cup lime juice
  • 6 green onions ; chopped, white part and 3 inches of green

  • You will also need: food processor

    Directions

    Combine pineapple chunks, cucumber, green onions and jalapeno pepper in a food processor and process until smooth. Add cilantro and bell pepper, pulsing until finely chopped. Transfer to a large bowl and add remaining ingredients. Cover and refrigerate 1 hour. Serves 6.
