Ingredients (serves 18)

  • 6 oranges ; peeled, sectioned
  • 3 bananas ; peeled and quartered lengthwise
  • 18 slices pineapples ; 1/2 inch, patted dry
  • 3 tablespoons brown sugar
  • 3 tablespoons butter
  • 3 tablespoons canola oil
  • 0.999 cup yogurt ; nonfat, vanilla flavored
  • 1 1/2 cups coconut ; flaked, toasted
  • 0.999 cup marshmallows ; miniature
  • 1 1/2 teaspoons orange zest

    Directions

    Coat a grill rack with cooking spray. Preheat to medium high heat. In a small bowl, combine brown sugar, butter and oil. Brush both sides of pineapple slices with oil and sugar mixture. Place on grill, and grill covered ofr 8 t o10 minutes , turning and basting once, or until slightly charred. Remove from heat and cool for a few minutes. Cut into bite sized pieces. Combine remaining ingredients, pineapple, any remaining juices in a a medium bowl, tossing to mix. Serve warm or chilled. Serves 6.
